Ingredients: Pasta (penne, fusilli, etc.), cooked chickpeas, cucumber, tomato, red onion, green bell pepper, red bell pepper, fresh coriander, lemon juice, olive oil, ground cumin, paprika, salt, pepper.
Preparation:
- Cook the pasta according to the package instructions, then drain and let cool.
- In a medium bowl, mix the cooked chickpeas, cucumber, tomato, red onion, green and red bell peppers, along with chopped fresh coriander.
- In a small bowl, prepare the dressing by mixing lemon juice, olive oil, ground cumin, paprika, salt, and pepper.
- Add the cooked and cooled pasta to the vegetable mixture in the medium bowl.
- Pour the dressing over the pasta and vegetables, and gently toss to coat all the ingredients.
- Serve chilled, garnished with chopped fresh coriander leaves.
