Preparation:
- Cook the pasta in a pot of boiling salted water according to the package instructions. Drain and let cool.
- In a large bowl, mix the cooked pasta, cooked chickpeas, cucumber, cherry tomatoes, diced red and green bell peppers, and chopped fresh parsley.
- In a small bowl, mix the lemon juice, olive oil, sumac, salt, and pepper to make the dressing.
- Pour the dressing over the pasta salad and mix well to coat all the ingredients.
- Taste and adjust the seasoning if needed.
- To serve, garnish the pasta salad with a few fresh parsley leaves.
