Ingredients: Pasta (penne, fusilli, etc.), drained canned corn, drained and rinsed canned black beans, halved cherry tomatoes, diced red bell pepper, diced green bell pepper, chopped fresh cilantro, lime juice, olive oil, salt, pepper, sliced avocado (optional), crumbled feta cheese (optional), sliced jalapeños (optional).
Preparation:
- Cook the pasta in a pot of salted boiling water according to the package instructions. Drain and rinse with cold water to cool.
- In a large bowl, mix the cooked pasta, drained corn, drained and rinsed black beans, halved cherry tomatoes, diced red and green bell peppers, and chopped fresh cilantro.
- In a small bowl, prepare the dressing by mixing lime juice and olive oil. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss to coat all the ingredients.
- Taste and adjust seasoning if needed.
- To serve, garnish the salad with sliced avocado, crumbled feta cheese, and sliced jalapeños, if desired.
